State of the gaming industry - Vishal Gondal, DisneyUTV Digital ...

At the recently concluded NASSCOM Game Developers Conference, we hung out with Vishal Gondal, Managing Director, DisneyUTV Digital, The Walt Disney Company (India) Pvt. Ltd.

Not only is he a cool chap to talk about the latest and greatest games, but being an old hand in the Indian gaming industry he has an opinion on pretty much everything related to gaming in India. Here?s an excerpt from our interview:

Q) Is anything wrong with the Indian gaming industry?
Vishal Gondal: The Indian gaming industry has grown multifold in the last 2-3 years. The only limitation I would say is the operator revenue share which needs to go up. This will give a definite boost to game developers and the industry.

Q) Tell us a bit about the Indie game movement in India. Are you happy with the state of Indie developers in the country?

Vishal Gondal: Yes. Indie game development has picked up in the country and is growing. Rise in multiple gaming platforms like the App stores which helps in direct monetization for them is one of the key reason for their growth.

Q) Is there an increased focus on mobile game development by Indian developers? If so, why is that? And is that a flawed strategy?

Vishal Gondal: There are multiple reasons for this. In today?s connected world, publishing a game on any App Store is something that independent developers can easily do by themselves. This gives them full control of the game from beginning to end. Secondly, the App stores have eased the process of monetization for them, too. Plus the ever growing mobile phones market in the country plays a vital role for this increased focus. No, this isn?t a flawed strategy.

Q) Are games developed in India (not counting multi-studio, multi-national projects) mainly casual and trivial in nature? If so, why is this the case?
Vishal Gondal: Majority of gamers in India are casual and first-time gamers. They need simple and engaging games and not complex ones. Angry Birds ? the most popular game today worldwide is a casual game and a universal example for this, too. Our latest game Barfi! which is a casual game for the Android phones was the #2 app on Google Play in the week of its launch.

Q) Is enough being done to attract the right talent into the Indian gaming industry?

Vishal Gondal: The key here is to provide encouragement and platforms which will help them grow. A good start to this is gaming conferences. There are successful gaming conferences now being held across the country which help them in networking, exchanging ideas and meeting the right people. Such platforms are a great way for startups and individuals who want to enter the gaming business where they get to learn from stalwarts of the industry.

Q) Anything that the government can do, specifically, to give the gaming fraternity in India a big boost?
Vishal Gondal: Yes, the increase in broadband infrastructure will pave way for growth of the gaming community.

Q) Any positives in the Indian gaming fraternity right now, any achievement we should be proud of?
Vishal Gondal: Loads! The country is witnessing more than 200 million game downloads a month. There is rampant growth in the number of startups and independent game studios. If we step back 5 years ago in time, the number of people who wanted to undertake gaming as a career option, let alone start a game development studio, were only a handful. Today with the increase in interests of venture capitalists, the gaming industry in the country there is witnessing a massive boom.

Q) What will drive gaming in the next two years among consoles, mobiles (tablets) and PC, and what is your expectation from each of these traditional gaming silos?

Vishal Gondal: With the number of mobile phones crossing 900 million in the country, I think the answer is quite obvious. It is mobile phones that will drive the gaming industry in the country. Consoles and PC will co-exist for sure but consoles with their limited audience and PCs with the limited penetration will not spearhead the industry for us.

Q) Share with us your journey into gaming as a profession, right from where it all began to this very day.
Vishal Gondal: My association with the digital industry goes a long back when I was 16. Right after finishing school, I started my first company ? FACT. In 1999, I founded Indiagames, which is today a part of DisneyUTV. Indiagames was started with a five member team which grew to 250 by 2011. Today as the Managing Director of the Digital business at DisneyUTV, I spearhead one of India?s leading digital businesses specializing in games, audio & video content.

Q) How do you ensure that the games developed by DisneyUTV Digital stand out from others?
Vishal Gondal: We develop games that appeals to the common man of India. Cricket and Bollywood are two biggest passions that Indians share and we provide them with the best game experience for both. Cricket Fever is our most popular game franchise with over 20 million downloads. Our games like Ra.One hit 1 million downloads within a week of its launch. We ensure that our games have easy gameplay and rich user experience to engage them. We have just got Paul Wrider onboard to head our Game design team. With Paul?s extensive experience and knowledge in game designing and the global gaming industry overall we will be able to develop new gaming IPs and add to our existing popular titles across mobile platforms.

Q) Any advice for people interested in taking up game development as a career option?
Vishal Gondal: My first and most important advice is that aspirants should play as many games as possible and get a good smartphone be it a Windows Phone, Android or iOS device. They need to experience and begin using apps before they can even create them. There are numerous online sources which can answer a lot of your questions. Moreover, be active on Twitter, Facebook and other social media sources and find relevant groups and participate in forums.

The Ethiopian regime has been organizing the past few days in Ogaden what it termed as ?a national gathering for consultation with society.? The regime claims the participants of this gathering are composed of the entire strata of Ogaden society such as elders, religious leaders, social organizations, intellectuals and even communities in the Diaspora. But in reality, using its surrogate regional administration in the Ogaden ? ?the so-called Somali Regional State? ? the regime has instructed its district administrative operatives to round up and coerce elders, traditional and religious leaders to attend this gathering. Some business people based in the Gulf states, specially the Hawala bankers who were forced to pay large sums of money for the so-called Millennium Dam project, were are also instructed to attend the meeting.

In addition, prisoners from Jail Ogaden in Jigjiga were brought?to the ?conference? and forced to humiliate themselves in front of their families by admitting to criminal acts they have not committed, which is contrary to Somali culture and religion ? a shameful act which was meant to constitute an enduring stigma that will stick to the prisoners and their families. This angered the elders so much that some of them openly rebelled; subsequently one of the elders was tortured to death.

Furthermore, the participants were instructed to claim that they had accepted the Ethiopian constitution and that ONLF does not represent them. They?were also forced to claim that there is peace and development in the ?Somali region? and that they are against the anti-peace elements, and vow to protect ? in a typical North Korean style ? the legacy of the ?beloved father of the nation? and preserve?the ?EPRDF revolution?.

This clearly proves ONLF?s refusal to accept the?illegitimate?Ethiopian constitution,?which was not endorsed by the Ogaden people, has hit home and now the regime is trying to create artificial support for its constitution and rule.

No matter how much the regime forces the Ogaden civilian population under its rule to humiliate themselves in front of the cameras, as it did to the Swedish journalists, the world knows the true colours of this regime and will no longer be misled by its shameful posturing.

Finally, until the people of the Ogaden are allowed to exercise their inalienable right to self-determination, no amount of suppression, massacres and genocide, embargo or artificial endorsement conferences for the Ethiopian constitution will neither deter nor dent the Ogaden people?s just struggle.

Crew of Mozambique national airline go on strike

MAPUTO, Mozambique (AP) ? Pilots and crew members at Mozambique's national airline have gone on a one-day strike, grounding the carrier.

Linhas Aerrreas de Mocambique Ltd. flights out of Mozambique's capital Maputo had been stopped Sunday by the strike. Workers told journalists that they wanted higher wages and better working conditions.

Joao de Abreu, an official with the state-owned airline, said international flights Sunday to Kenya, Tanzania and Zimbabwe had been cancelled over the strike.

Late Sunday night, negotiator Paulo Napoleao said workers struck a deal with the airline to resume flights Monday. Terms of the deal were not immediately available.

The European Commission banned Mozambican airlines last year from flying from Europe, citing a lack of technicians to implement safety rules.

Houston QB throws for 527 yards, 5 TDs in 43-37 OT victory over Jacksonville

HOUSTON - Andre Johnson had the game of his life to save the Houston Texans on Sunday.

Johnson finished off a career day by turning a screen pass from Matt Schaub into a 48-yard sprint for the winning touchdown as the Texans rallied to beat Jacksonville 43-37.

"All the good teams find a way to win, no matter if it's ugly, pretty or whatever," Johnson said. "In the win column, it either says `W' or `L.' They don't ask how you got it done."

Schaub threw a career-high five touchdown passes, completed a franchise-record 43 passes and finished with 527 yards in the air, second most in NFL history. Warren Moon also threw for 527 yards for the Houston Oilers in December 1990 in Kansas City. Norm Van Brocklin holds the record with 554 for the Rams in 1951.

Johnson caught 14 passes for 273 yards, both career highs; the yardage was a team record. He turned 31 in July, but has been saying for weeks that he's feeling as fit and healthy as he ever has.

"Maybe you guys will believe me after that," Johnson told reporters after the game.

He seemed to be open all day and he was somehow uncovered again when Schaub flipped him the short pass for the decisive score.

"When I caught the ball, and I saw how open I was, I was looking around like, `Where are the defenders at?"' Johnson said. "I took off running, I kept looking. I thought the cornerback would come from the outside, but he wasn't there. It was just the safety, so I was just saying to myself, `I can't let him tackle me."'

It almost didn't come to that. Houston trailed 34-20 with 12 minutes left, but Schaub completed 16 consecutive throws to launch the comeback.

"Something we can look back on as we move through this," Schaub said, "because there are going to be games like that, that are not always going to be a two- or three-score lead in the fourth quarter, where you're trying to run the clock out."

The Texans (9-1) won an overtime game for the first time at Reliant Stadium and improved to 2-7 in overtime in their history. The Jaguars (1-9) have lost three road games in overtime this year.

"I told them afterwards, we didn't come here for a tie," Jacksonville coach Mike Mularkey said. "We had some chances. We just did not make some of the plays that we haven't made throughout the year."

Houston's comeback wrecked big days by Chad Henne and first-round pick Justin Blackmon, who showed that the Jacksonville offense does actually have some spark.

Henne threw a career-high four touchdown passes in relief of injured Blaine Gabbert and Blackmon made seven catches for 236 yards. It was the first time in NFL history opposing players each had more than 200 yards receiving in the same game.

The Jaguars looked like they were on their way to one of the biggest upsets of the season when Henne hooked up with Blackmon for a stunning 81-yard touchdown with 12:33 left in regulation to put Jacksonville up 34-20.

Schaub then threw two touchdown passes to tight end Garrett Graham in the final 5:39 to force overtime.

Shayne Graham and Josh Scobee kicked field goals in overtime and, for a while, it looked like NFL would have its second tie in two weeks. San Francisco and St. Louis finished 24-24 last week.

Henne threw incomplete on fourth-and-10 from the Houston 47, and the Texans regained possession with 2:30 left in OT. Schaub saw the perfect defense for a receiver screen pass to Johnson, who took the pass and sprinted untouched down the right sideline to end it.

"We got what we wanted," Schaub said, "and `Dre did the rest."

Johnson surpassed his own single-game records for receptions and yards receiving. Kubiak thinks those records may stand for a while.

"I don't know if that one will ever be touched," Kubiak said. "That was special from the Texans standpoint."

Gabbert left in the first quarter with a bruised right elbow. Mularkey said last week that he was sticking with Gabbert as his starter, but he may have to go with Henne now. He didn't have an update on Gabbert's injury after the game and will decide later whether to start Gabbert next week.

With Henne guiding the offense, Jacksonville had 238 yards by halftime.

"You've just got to always be prepared and ready to go in," Henne said. "I've been preparing these last couple weeks like I've got to be the starter, and any time he (Gabbert) goes down, just jump in and hopefully not lose a step."

Denver earns first weekend sweep of rival Colorado College since 2005

DENVER ? Senior Chris Knowlton scored two goals and added a pair of assists, leading No. 2 Denver to a 6-2 victory and a weekend sweep of No. 14 Colorado College in front of a sellout crowd of 6,096 at Magness Arena on Saturday night.

It marked the first time the Pioneers (9-1-0, 7-1-0 WCHA) swept a weekend series against the Tigers (7-5-0, 4-2-0 WCHA) since Dec. 2-3, 2005. DU needs just one point against CC in the series on Feb. 8-9, 2013, in order to reclaim the Gold Pan Trophy for the fourth time in the past five years.

?We were really able to establish how the game was going to go by the way we played in the first period,? head coach George Gwozdecky said. ?We played well, we dominated puck possession, and we scored three good goals. We gave up a pretty easy goal on a miscommunication between our goalie and defensemen, but other than that it was the best opening period we played all year. And it set the tone for the way we wanted the game to be played.?

Freshmen Gabe Levin and Quentin Shore, sophomore Matt Tabrum and senior Shawn Ostrow also found the back of the net for the Pioneers.

Junior goaltender Sam Brittain finished the night with 28 saves, while CC goaltender Joe Howe posted 24 saves.

The Pioneers got on the board first as Levin scored his first career goal just 3:39 into the game, finding the puck on the goal line and poking it in after a Knowlton shot and David Makowski pass.

Tabrum scored at the 10:14 mark in the first period, his second goal in as many nights, off an assist from Quentin Shore.

Ostrow put the Pioneers up three goals on a power play at the 17:21 mark in the first off passes by Daniel Doremus and Scott Mayfield.

Just 14 seconds later, Colorado College got a goal when Scott Winkler scored on an assist by Archie Skalbeck.

The Tigers scored again with just two minutes left in an otherwise scoreless second period, when William Rapuzzi scored with Mike Boivin and Scott Winkler getting the assists, just six seconds into a Makowski penalty.

In the final minute of the second period, Winkler was given a game misconduct penalty for contact to the head, and 31 seconds into the third period the Pioneers capitalized. Nick Shore and Joey LaLeggia passes set up Knowlton?s seventh goal of the season to put Denver up 4-2.

At the 5:01 mark in the third period, Quentin Shore riffled a wrister top shelf on a breakaway for his third of the season, which was assisted by Knowlton.

Knowlton sealed the game at the 17:31 mark in the third period off assists from Nick Shore and Levin.

In the game, Denver went 2 for 5 on the power play and killed off 4 of 5 penalties. DU dominated in the faceoff circle with a 33-14 advantage, including Nick Shore?s 18-3 and Ostrow?s 10-4.

Charisma Spencer came by her first name in a very unusual way. She wasn?t named charisma because she was charismatic ? not if you define charismatic. How could anyone know if this newborn was charismatic? No, she was named Charisma because the attending nurse misspelled her name on the birth certificate, the day she was born.

She was supposed to be named Chariena after her great grandmother who had lived in a small English village, many years ago. Chariena was famous in England for having saved so many influenza victims with her herbs and potions. But, Charisma would never be called Chariena.

When Mrs. Spencer had gotten home from the hospital and discovered the error on the birth certificate she recalled a certain kind of connection she had felt when she first looked into her newborn daughter?s eyes. There was something magnetic about the child and the tiny gray eyes made you feel something cozy when she looked back at you.

Maybe the name Charisma would actually suit the child better. Deciding to sleep on the issue, Mrs. Spencer went to bed having no idea she would, ultimately, opt to keep the misspelled name for her baby. The next day she talked it over with her husband who was secretly delighted because he had felt mixed about the name Chariena from the beginning.

Years later when Charisma graduated from high school there was a long line of well-wishers begging her to keep in touch. Charisma was indeed charismatic. Anyone who knew charisma knew she could charm you off your feet without even trying. She had a big heart and her heart was opened to the world.

Charisma was a dazzling combination of fine qualities. She had integrity, she was compassionate, honesty was her policy, and she always thought of others first. Charisma graduated from The High School of Music and Art and had been accepted to Pratt Institute, one of the finest Visual Arts colleges in the world. Art was Charisma?s greatest love and her greatest talent.

On this day, out of the blue, Charisma began remembering a particular spring day, years ago, when she had lain in the hammock in her backyard. She had won an art award at the school that day and was basking in the praise.

In her musings, Charisma had wondered if it was safe to say there was a connection between the dictionary definition of charisma and the dictionary definition of visual art. Could there be a certain charisma to the creation of art? She had laughed because she was certainly a Charisma that had a definite connection with visual art.

Remembering that long ago day got her to thinking about it all over again. She knew there was such a thing as ?charismatic art.? She had heard the term before. And, there certainly were charismatic artists, throughout history. Around and around her thoughts went. She would think the subject to pieces if she allowed herself.

?? Hello! ? Wake up! ? Stop daydreaming,? she said to herself. Charisma crossed the street and headed for the art supply store in the middle of the block. She had run out of art supplies and was late for studio practice at the school. Snuggling into her warm, wooly scarf Charisma hunched her shoulders against the cold and hurried down the street.

High court to take new look at voting rights law

WASHINGTON (AP) ? The Supreme Court said Friday it will consider eliminating the government's most potent weapon against racial discrimination at polling places since the 1960s. The court acted three days after a diverse coalition of voters propelled President Barack Obama to a second term in the White House.

With a look at affirmative action in higher education already on the agenda, the court is putting a spotlight on race by re-examining the ongoing necessity of laws and programs aimed at giving racial minorities access to major areas of American life from which they once were systematically excluded.

"This is a term in which many core pillars of civil rights and pathways to opportunity hang in the balance," said Debo Adegbile, acting president and director-counsel of the NAACP Legal Defense and Educational Fund.

In an order Friday, the justices agreed to hear a constitutional challenge to the part of the landmark Voting Rights Act that requires all or parts of 16 states with a history of discrimination in voting to get federal approval before making any changes in the way they hold elections.

The high court considered the same issue three years ago but sidestepped what Chief Justice John Roberts then called "a difficult constitutional question."

The new appeal from Shelby County, Ala., near Birmingham, says state and local governments covered by the law have made significant progress and no longer should be forced to live under oversight from Washington.

"The America that elected and reelected Barack Obama as its first African-American president is far different than when the Voting Rights Act was first enacted in 1965. Congress unwisely reauthorized a bill that is stuck in a Jim Crow-era time warp. It is unconstitutional," said Edward Blum, director of the not-for-profit Project on Fair Representation, which is funding the challenges to the voting rights law and affirmative action.

But defenders of the law said there is a continuing need for it and pointed to the Justice Department's efforts to block voter ID laws in South Carolina and Texas, as well as a redistricting plan in Texas that a federal court found discriminated against the state's large and growing Hispanic population. "What we know even more clearly now than we did when the court last considered this question is that a troubling strain of obstructing the path to the ballot box remains a part of our society," Adegbile said.

Since the court's decision in 2009, Congress has not addressed potential problems identified by the court. Meanwhile, the law's opponents sensed its vulnerability and filed several new lawsuits.

Addressing those challenges, lower courts have concluded that a history of discrimination and more recent efforts to harm minority voters justify continuing federal oversight.

The justices said they will examine whether the formula under which states are covered is outdated because it relies on 40-year old data. By some measures, states covered by the law are outperforming some that are not.

Tuesday's election results also provide an interesting backdrop for the court's action. Americans re-elected the nation's first African-American president. Exit polls across the country indicated Obama won the votes of more than 70 percent of Hispanics and more than 90 percent of blacks. In Alabama, however, the exit polls showed Obama won only about 15 percent of the state's white voters. In neighboring Mississippi, the numbers were even smaller, at 10 percent, the surveys found.

The case probably will be argued in February or March, with a decision expected by late June.

The advance approval, or preclearance requirement, was adopted in the Voting Rights Act in 1965 to give federal officials a potent tool to defeat persistent efforts to keep blacks from voting.

The provision was a huge success, and Congress periodically has renewed it over the years. The most recent occasion was in 2006, when a Republican-led Congress overwhelmingly approved and President George W. Bush signed a 25-year extension.

The requirement currently applies to the states of Alabama, Alaska, Arizona, Georgia, Louisiana, Mississippi, South Carolina, Texas and Virginia. It also covers certain counties in California, Florida, New York, North Carolina and South Dakota, and some local jurisdictions in Michigan and New Hampshire. Coverage has been triggered by past discrimination not only against blacks, but also against American Indians, Asian-Americans, Alaskan Natives and Hispanics.

Before these locations can change their voting rules, they must get approval either from the U.S. Justice Department's civil rights division or from the federal district court in Washington that the new rules won't discriminate.

Congress compiled a 15,000-page record and documented hundreds of instances of apparent voting discrimination in the states covered by the law dating to 1982, the last time it had been extended.

Six of the affected states, Alabama, Arizona, Georgia, South Carolina, South Dakota and Texas, are backing Shelby County's appeal.

In 2009, Roberts indicated the court was troubled about the ongoing need for a law in the face of dramatically improved conditions, including increased minority voter registration and turnout rates. Roberts attributed part of the change to the law itself. "Past success alone, however, is not adequate justification to retain the preclearance requirements," he said.

Jurisdictions required to obtain preclearance were chosen based on whether they had a test restricting the opportunity to register or vote and whether they had a voter registration or turnout rate below 50 percent.

A divided panel of federal appeals court judges in Washington said that the age of the information being used is less important than whether it helps identify jurisdictions with the worst discrimination problems.

Shelby County, a well-to-do, mostly white bedroom community near Birmingham, adopted Roberts' arguments in its effort to have the voting rights provision declared unconstitutional.

Yet just a few years earlier, a town of nearly 12,000 people in Shelby County defied the voting rights law and prompted the intervention of the Bush Justice Department.

Ernest Montgomery won election as the only black member of the five-person Calera City Council in 2004 in a district that was almost 71 percent black. The city redrew its district lines in 2006 after new subdivisions and retail developments sprang up in the area Montgomery represented, and the change left his district with a population that was only 23 percent black.

Running against a white opponent in the now mostly white district, Montgomery narrowly lost a re-election bid in 2008. The Justice Department invalidated the election result because the city had failed to obtain advance approval of the new districts.

The case is Shelby County v. Holder, 12-96.

Club Sports Spotlight ? Equestrian Club | SIUE Campus Recreation ...

We caught up with Amanda Hyett, president of the Equestrian Club about her experiences riding at SIUE! Did you know, this year at Preview Day, many prospective students expressed interest in joining this outstanding organization.

When was the Equestrian Club established at SIUE?
The Equestrian Club began in the Fall of 2008 by Leslie Harmon.

When did you start riding horses?
I have been riding ever since I can remember. We have always had horses, so it can be difficult to say exactly when I started.

Why did you join the club organization at SIUE?
I joined because I was actively showing while in high school, and discovered the opportunity to continue that while still in college.

What is your favorite thing about participating in the Equestrian Club at SIUE?
Meeting other people who share a similar passion. I wouldn?t have met, and be the person I am today if it weren?t for the people I have met through the Equestrian Club.

How often does the club get together to ride horses?
Mostly it is done independently through our riding coach, but we try for one group trail ride a semester.

What is it like to travel and compete against different schools?
A little nerve raking! Everyone is so good, and you never know what kind of ride you are going to have because you never know what kind of horse you will get.

What is your favorite memory participating in the Equestrian Club?
Car rides to shows! So early, but so worth it!

What is the club most looking forward to this year?
Getting everything moving in a fluid and forward motion!

Recipes to fill your home with the scents of the season | Food ...

VANILLA BRINED TURKEY

Makes one 16 to 20 pound turkey

Ingredients:

1 16 to 20 pound turkey, giblets removed, cleaned and pat dry

- Vanilla brine:

3/4 cup kosher salt

2/3 cup light brown sugar

1/4 cup old hickory smoked salt

2 tablespoons ground white pepper

1 tablespoon ground cardamom

2 cinnamon sticks

2 teaspoons yellow mustard seeds

1/2 gallon vegetable stock

1/3 cup pure vanilla extract

1/2 gallon heavily iced water

- Vanilla bourbon butter

1 stick unsalted butter, melted

3 tablespoons pure vanilla extract

2 tablespoons sweet bourbon

salt and pepper to taste

- Aromatics

1 green apple, halved

1 yellow onion, halved

1/2 bunch thyme

1/2 bunch rosemary

1 cinnamon stick

Directions:

1. Preheat oven to 450 degrees.

2. Place the first eight ingredients of the brine in a large pot and simmer until the spices dissolve. Allow to cool completely.

3. Pour the cooled stock mixture into a large storage container and stir in the vanilla and ice water.

4. Completely submerge the turkey into the liquid breast side down and brine for 10 to 16 hours, stored in a cool, dry place.

5. While the turkey is in the brine, make the vanilla-bourbon butter: Place the ingredients into a bowl and whisk together until completely combined. Set aside.

6. When ready, remove the turkey from the brine and pat dry.

7. Stuff the cavity of the turkey with the aromatics and rub the skin, both under and over, with the vanilla bourbon butter.

8. Season the turkey with salt and pepper.

9. Tie the legs together tightly, tuck the wings under the back, and transfer the bird to a roasting pan.

10. Place the turkey into the oven and roast for 30 to 40 minutes, allowing the skin to brown.

11. Remove the turkey from the oven and cover the breast with foil to prevent burning.

12. Reduce the oven temperature to 350 degrees and continue to roast the turkey for 2 1/2 to 3 hours, basting every 30 minutes.

13. Remove the foil from the breast 30 minutes before the turkey is ready to come out of the oven, and continue to roast until an instant read thermometer reads 161 degrees.

14. Remove the turkey from the oven, loosely covered with foil and allow to rest for 20 to 30 minutes before carving.

SWEET POTATO RISOTTO

Ingredients:

8 to 10 cups water

2 tablespoons unsalted butter

1 tablespoon olive oil

1 large onion, diced

2 cups Arborio rice, or other short grain variety

1 cup dry white wine

1 large sweet potato, baked, peeled and pureed

2 teaspoons pure vanilla extract

1/4 cup light brown sugar

4 tablespoons cold unsalted butter

1/2 cup grated parmesan

Salt and pepper to taste

Directions:

1. Place water in a saucepan and bring to a boil, set the heat to low and let simmer.

2. Heat oil and butter in a medium saucepan over medium-high heat.

3. Add onion and cook until translucent and soft.

4. Add rice and toss to coat.

5. Add wine and cook until completely reduced by half.

6. Reduce heat to low, add 2 cups of the boiling water and cook until absorbed.

7. Continue adding 1 cup of water at a time and cook, gently stirring between additions until all liquid is absorbed. Repeat until rice is al dente.

8. Stir in sweet potato, vanilla, brown sugar and mix until combined.

9. Add the other 4 tablespoons butter and parmesan.

10. Season with salt and pepper to taste.

Serves 4

MEATBALLS WITH SPICY CRANBERRY SAUCE

Ingredients:

- Meatballs

2 tablespoons extra virgin olive oil

1/2 cup onion, small dice

1/2 cup celery, small dice

1 clove garlic, minced

1/2 teaspoon sage

1/2 teaspoon thyme, ground

1 slice white bread, crusts removed

1 tablespoon milk

12 ounces ground turkey

1 egg white, lightly beaten

2 tablespoons fresh parsley, chopped

1/2 teaspoon sea salt

1/2 teaspoon pepper, black cracked

- Spicy cranberry sauce

5 ounces fresh or frozen cranberries, rinsed

1/2 cup water

1/2 cup sugar

2 tablespoons diced jalapeno, seeded or unseeded

Directions:

1. Heat olive oil in a skillet over medium high heat, add onion, celery and garlic. Cook until onions are translucent, about five minutes. Stir in sage and thyme, cooking one minute. Remove from heat and set aside.

2. Pour milk over the slice of bread in a bowl and let soak for a few minutes.

3. Preheat oven to 400 degrees and line a sheet pan with parchment paper. Spray with cooking oil.

4. Mix turkey, onion mixture, salt and pepper in bowl. Squeeze out as much milk as you can from the bread and tear it into pieces over the turkey mixture.

5. Add lightly beaten egg white and with your hands, blend the meat mixture.

6. Use a 1 ounce scoop to make 15 meatballs.

7. Place on prepared baking sheet and place in 400 degrees oven for 20 to 25 minutes. Serve warm with spicy cranberry sauce.

Sauce:

1. Heat water and sugar in a sauce pan over medium high heat until boiling.

2. Add cranberries and jalapenos, bring back to boil, reduce heat and simmer until the cranberries have burst, about 10 minutes.

3. Remove from heat and cool. Serve at room temperature.

BEAU MONDE DIP

Ingredients:

2/3 cup mayonnaise

2/3 cup sour cream

1 tablespoon chopped green onion

1 tablespoon parsley

1/2 teaspoon Beau Monde seasoning

1/2 teaspoon dill weed

Directions:

1. Mix mayonnaise, sour cream, green onion, parsley, Beau Monde seasoning and dill weed in a small bowl.

2. Cover and chill a minimum of 30 minutes to blend flavors.

VANILLA PEAR TART WITH VANILLA CARAMEL GLAZE

Serves 8-10

Ingredients:

- For the pastry

1 1/4 cups all-purpose flour

3 tablespoons sugar

1/8 teaspoon sea salt

1/2 cup very cold unsalted butter, cut into 1 inch chunks

1 large egg yolk, beaten

1/2 teaspoon pure vanilla extract

1-2 tablespoons milk

- For the filling

1/3 cup sugar

1 large egg

8 oz. cream cheese

2 tablespoons sour cream

1 teaspoon pure vanilla extract

1 teaspoon lemon juice

Pears and glaze

2 tablespoons sugar

2 tablespoons water

1/2 teaspoon pure vanilla extract

2 large ripe pears

Directions:

- For the pastry

1. In a food processor fitted with a steel blade, combine flour, sugar and salt. Blend.

2. Add butter and pulse until mixture resembles coarse meal.

3. Add egg yolk, 1/2 teaspoon vanilla and 1 tablespoon milk. Process only until particles begin to hold together. If mixture is still crumbly, add a bit more milk a teaspoon at a time.

4. Shape dough into a ball and roll out between two sheets of wax paper into a 12-inch round of even thickness.

5. Refrigerate for at least 30 minutes and up to eight hours.

6. Preheat oven to 375 degrees.

7. Peel one sheet of wax paper from the dough and place wax paper side up over a tart pan about 1-inch deep and 9 to 10 inches in diameter. Gently peel off wax paper and pat dough into pan, smoothing and pressing into bottom. Trim excess dough even with top of tart pan. Prick bottom of dough with fork.

8. Cover edges of crust with aluminum foil and par bake for 50 minutes until bottom just starts to brown. Make filling and glaze while shell bakes.

- For the filling

1. Beat together sugar and egg.

2. Add cream cheese, sour cream, 1 teaspoon vanilla and lemon juice. Beat until smooth.

3. Remove foil from par baked shell, add cream cheese filling, reduce heat to 350 degrees and bake for an additional 15 minutes or until filling is barely set.

- For the glaze

1. Combine sugar and water in a small pan and heat over medium until boiling.

2. Reduce heat and simmer until slightly golden.

3. Remove from heat and stir in vanilla.

- Final assembly

1. Peel, core and slice pears.

2. Arrange on baked filling, brush with vanilla glaze and return to oven for five minutes to heat pears through.

3. Serve warm or at room temperature.

HOLIDAY COCKTAIL

Ingredients:

1 ounce simple syrup

1 ounce Ferrnet Branca

1/2 ounce egg white

1 drop of pure vanilla extract

A pinch of caraway seeds, toasted and cracked

Directions:

1. Do a dry shake with all components then add ice and shake again.

2. Strain and serve in a martini glass.

3. Leave as is without garnish.
